In his 2016 book, Can It! The Perils and Pleasures of Preserving Foods, Gary Allen, a food writer and adjunct professor at SUNY Empire State College, traces the evolution of food preservation as a source of culinary innovation. “The original food-preservation methods—like salting and drying and all that—actually turned the food into something else,” he told me over the phone. “Cabbage sauerkraut is not the same thing as cabbage. Wine is not the same thing as grape juice.”
When it comes to transmittable diseases, your best bet is avoiding exposure: if there's something really nasty making rounds in your community, stay home - or at the very least, avoid public transport and other crowds. With that in mind, N95 masks ($2 a piece) probably provide adequate protection against most airborne diseases. The other major transmission vector is hand contact, so don't touch other people, avoid public-use surfaces, wear gloves, and resist the instinct to touch your face without first washing or disinfecting your hands. We subconsciously touch our faces a lot more frequently than we suspect.

The movement received another boost from the George W. Bush Administration’s mishandling of Hurricane Katrina. Neil Strauss, a former Times reporter, who chronicled his turn to prepping in his book “Emergency,” told me, “We see New Orleans, where our government knows a disaster is happening, and is powerless to save its own citizens.” Strauss got interested in survivalism a year after Katrina, when a tech entrepreneur who was taking flying lessons and hatching escape plans introduced him to a group of like-minded “billionaire and centi-millionaire preppers.” Strauss acquired citizenship in St. Kitts, put assets in foreign currencies, and trained to survive with “nothing but a knife and the clothes on my back.”
Beyond this, stick to your favorite foods and don't feel pressured to skip regular meals - but cut all portions in half, even if it means throwing a half-eaten burger out. Don't go back for seconds, too. It will feel wrong the first couple of times, but it's surprisingly easy to do. That's because portion control is almost completely psychological; your blood hormone and nutrient levels go up only some time after you cleaned your plate. Eating more slowly can make this step a lot easier, too.

Car electricity runs on direct current, but almost everything else is alternating current. What you need: an inverter. Some cars have them built in, but you can get one at a store for less than $40. Use the clamps to attach the inverter directly to the terminals on your car battery. Let the car run at idle and you have 110-volt AC power for as long as you have gas. With a 300-watt inverter, you'll have enough amps to run a laptop or even a television.
You just never know what tomorrow will bring, but don’t wait until the time of a crisis to practice some of these skills. Learn to garden, because fresh food is healthier…make it a natural part of your life. Two tomatoe plants can produce a lot of tomatoes! Learn to fish..for fun with the family! Make a mental note of the people around you (or coworkers) who hunt. Learn to milk a cow(I am not kidding). Learn to sew or knit. Learn to cook over an open fire pit…make sure you build a fire pit! These are little things you can do now…without a computer. Hold practice runs with your community with disaster plans. A manual is not going to help you. What you know on a regular basis, will. What good is 20 lbs of rice going to do without knowing how to cook it without a stove or electricity???! It’s not! And for heavens sake, take a first aid class, and invest in a very good first aid kit. That is something you should do anyway.

One thing that lots of folks don’t consider is that no matter how many supplies you have, they’re not going to last forever – at some point, you’ll need to supplement your supplies with food you can grow or acquire. This means things like gardening, raising livestock, hunting, and foraging.   For this, section, not only do you need to stock up on seeds and gardening supplies, but you need to practice these skills right now when you have a grocery store as a backup.
We have several of the shelves from Costco/ Sam’s Club. They are great! Put the thin bar across the front of your shelves, not the back. We have some shelves from Thrive Life that rotate the food for you too. Love those! Bought on Black Friday sales. In the end, do what works for you and you budget and space. Ours has changed many times over the years.
That said, when we look beyond the dogma, the underlying facts paint an an incredibly nuanced picture of the right to bear arms - putting into question many of the deeply-held and seemingly common-sense beliefs. For example, despite the striking ubiquity of legally owned firearms in the United States - about one per every resident - the country actually enjoys lower per-capita rates of suicide, robbery, assault, or rape, compared to some of its esteemed European peers. This simple fact deals a serious blow to the creed that more guns translate to more crime.

Three hours after I arrived, Andrew: senses it’s time to wrap up, but not before breaking into one last story about the Bigfoot footprints he keeps in the back of his car. The prints were collected in Arkansas in 1956, he says, and they belong to an adult male, a juvenile female and an adult female. I love my bread machine and hope to use it as well although I do know how to bake traditional bread too. I just baked my first loaf of bread using home-milled flour. I made a 100% whole wheat bread and used a powdered egg plus some vital gluten. It was a bit more dense than normal – I should have added more water to account for the extra gluten (4 TBL). Still, it was quite delicious 🙂
Freeze-dried food is nothing new. As early as the 13th century, the ancient Quechua and Aymara people of Bolivia and Peru pioneered a form of the process by exposing potatoes to the freezing temperatures of the Andes overnight, then drying them in the sun. In 1937, Nestlé used industrial technology to create the world’s first freeze-dried coffee, and in the 60s and 70s, the US military shipped freeze-dried food rations to the troops in Vietnam.
And what better place to prepare than the Ozarks? Strafford got 47 inches of rain last year; the mean temperature was a mild 59 degrees. The Springfield Plateau has a 200-foot-deep aquifer for when rainwater gets scarce. The region is largely insulated from natural disasters—save the odd tornado or benign rumbling from the Bootheel’s New Madrid Fault Line—and the low population density of like-minded folks means preppers, survivalists and homesteaders get left alone. A Lebanon real estate agent tells me remote acreage is an increasingly hot commodity for city dwellers eager to go native. Conversations with locals and time spent on survivalism forums reveal a religious cohort who believe the Ozarks are God’s country—sacred ground upon which one can wage a last stand against the sins of a rapidly globalizing world.

Start your breakfast with high-quality protein powder and insoluble dietary fibers (about 20-30 grams each; you can mix them together in a cup of cold water). There is fairly clear evidence that fiber and protein can increase satiety and reduce cravings thoroughout the day. Sure, it's not "natural", but it beats making implausible resolutions to organize your life around low-calorie, fiber-rich meals - especially if you don't like veggies or don't usually cook your food.


Still, these extraterrestrial-looking foodstuffs seem to be having something of a moment: For the past four years, Costco has been selling pallets of shriveled vegetables, fruits, grains, and meats that promise to feed a single family for up to a year—and if you’re not a member, you can purchase similar survival kits, many of which boast a 20- to 30-year shelf life, at Walmart and Target. One top seller, Wise Company, saw its sales nearly double over the past four years, reaching around $75 million, according to a Bloomberg Businessweek cover story last November. The company’s CEO, Jack Shields, told me he estimates the industry as a whole generates between $400 and $450 million annually in retail.
My two cents worth here. Go with 5 gallon buckets. Many purchased from the local donut shop at $1.25. My variation on Mylar bags and oxygen absorbers — a chunk of dry ice, about 3×4 inches. With this on the bottom of the bucket and little piece of paper towel over it, pour in rice or beans or wheat or corn or a mixture of things. Put the lid on, but do not snap it tight. Wait a few minutes until the bottom of the bucket is not real cold and snap the lid on. Dry ice, which is CO2, forces out the air in the bucket. I recently opened rice and a mixed container which had been sealed five years ago. Everything was fine. Obviously we did eight or 10 of these buckets at once. Got dry ice from the local grocery store. Be sure to wear gloves when handling it.
Now, a word of caution: beware of debt. Many of us are taught that owing money is normal, even desirable; indeed, for middle-class folks, some forms of indebtedness may be difficult to avoid. But unnecessarily accrued debt cuts into your bottom line in two insidious ways. First of all, monthly installment payments limit your flexibility in an emergency - so if your income shrinks, your savings will be depleted at a merciless and non-negotiable rate. Secondly, high-interest loans, such as credit cards, amount to giving out a good chunk of your income without earning anything useful in return. They are akin to voluntarily accepting a pay cut.

People who carefully and painstakingly prepare for mass extinction don't exactly seem like the type of people who plan great parties. At least, with those vast collections of guns, ammo, and other terrifying armaments, I certainly hope not. Then again, I suppose everyone will need a drink or 10 to get through the inevitable horrors of forever navigating the "what's for dinner" question without Seamless or, you know, realizing that your urban-dwelling family members will probably never arise from the blasted pit of rubble where their apartments once stood.
Now I am obviously a big fan of couponing, but it can come at a price.  One of the classic dilemmas about couponing is whether or not to use a coupon on a brand-name item, or to just buy the store-brand item.  This decision will almost always be circumstantial.  Sometimes, the store-brand item will be a better deal than the brand-name plus coupon.  If you are new to couponing, it can be quite frustrating, as it seems like you are spending more money than you did before just to get all of the deals.  This may be true, and it may cause you to want to switch to store-brand items.  While this is not always a bad idea, as inexperienced couponers can end up spending a lot of money, make sure you do the comparison to find the better deal.  Also, always remember, particularly for a stockpile, that timing matters!  The store-brand may be the better deal this week, but next week might be double coupon week, meaning you could get that item for free next week as opposed to paying a little for the store-brand this week.  Doing your research on a case-by-case basis and remaining patient are keys for amassing a completely free stockpile.

But even in far more realistic situations, being able to set up a camp can be a valuable skill. During mass evacuations, there is always a good chance of being stuck on a congested highway for a day or two, or reaching your destination only to find out that all the hotels and motels are full. The benefits are clear for some small-scale emergencies, too: if backed-up sewage makes your home uninhabitable for a while, setting up a tent in a friend's backyard can be much cheaper than staying in a hotel for several weeks.

...what do I need to bring? How much can you realistically take with you when leaving by car, by bike, or on foot? What are the most important items, and will you be able to grab them quickly enough? To simplify things, would it make sense to maintain a small cache of supplies in the trunk of your car or at a friend's place - and if yes, what should be in that box?
Robyn Gershon, a public-health professor at N.Y.U. who specializes in disaster preparedness, concedes that, in the age of global warming, it is not so outlandish to be thinking about the apocalypse. Per the “push-pulse theory of extinction”—a theory devised to explain the mass death of the dinosaurs—any strain on an ecosystem leaves the species in it far more vulnerable to cataclysm. Today, climate change and rising sea levels put us at greater risk of being wiped out by a disastrous event, such as a pandemic or a supervolcano.
Great article! It is so helpful to read about the basics again and again. IMHO, the most important guiding point in the article is to prep what you will actually eat. This week my husband cooked DAK ham in a skillet with potatoes and melted cheese. It was just okay. I’m not crazy about the ham and am choosing not to prep it. Proteins have been the most difficult for me. So far, proteins I am SURE I will eat are all kinds of dried and canned beans, shelf-stable tofu (Mori-Nu), and Campbell’s Roadhouse Chili. This chili tastes a lot better than Hormel and tastes great over rice. The Mori-Nu tofu can be heated in a minute in the same pot with a pack or 2 of ramen noodles. I don’t use the seasining pouches b/c of MSG so I add a little soy sauce and dried ginger to the noodle-cooking water. Dehydrated scallions would be good addition but I have not tried dehydrated food yet. Although I do not like canned salmon or regular salmon pouches, I found pouches of grilled salmon and smoked salmon which I’m going to force myself to try this week.
Use mylar bags when storing bulk items.  After about four years the pinto beans started growing mold.  It was hard to get the stink out of the bucket even after using bleach.  I didn’t have a mold problem with my black beans or other food just the pinto beans.  I trashed them and bought more storing them in the same bucket.  After two years they became moldy again.  I now use one-gallon mylar bags to help:

To protect his wife and daughter, he said, “I don’t have guns, but I have a lot of other weaponry. I took classes in archery.”

Of course, there are many other high-tech gadgets popular among some of the more affluent and paranoid preppers - anything from satellite phones, to night vision goggles, to heated insoles. In all likelihood, none of that is worth the cost. If I had to pick two extravagant "doomsday" accessories that could conceivably be useful to some people if something truly awful happens to the world, I'd go with a waterproof hiking GPS unit and a portable Geiger counter. Both are powered by AAA batteries and cost around $140. (We'll talk about Geiger counters and their relative merits a bit later on.)


Only suggestion I’d make is for #8 Develop a communications and transportation plan: Add a get home bag to your vehicle or in your office. If you can’t do that, at least have a small every day carry bag that has a few essentials to help you get home if you have to go on foot. I’ll always remember the videos on the news about the hordes of folks walking out of NYC and have to wonder how many of them had more than just a small purse with them. I have GHBs in both cars and another one at my office in case I can’t get access to my car. Just small backpacks with some food, blankets, small first aid kit and a few sundries. Vehicle GHBs add small camping stove and fuel tablets as well as tiny tent and disposable mylar sleeping bag plus a small supply of silver dimes in case I can’t use cash and need to buy my way home.

I see myself as a modern man (born in 1980) and novice prepper, but dammed if I know anyone who hasn’t got a manual can opener, also storing soda bottles of water behind baseboards in kitchen units is also fairly common amongst people i know. If you have meat in large cuts and steaks in a freezer even once they defrost they keep a lot longer if preserved by smoking or drying, even ground meats can be made into patties and smoked to last longer, vegetables and fruits stored in a freezer can also have their useful lives extended by preserving as pickles and jam’s.
All right. Financial systems are messy. Fiat money and fractional-reserve banking, although wildly successful, can fail in interesting and horrific ways. Foreign trade, neglected here but absolutely vital for most European countries, adds even more variables to the mix. Business titans grew uncomfortable. In 1889, Andrew Carnegie, who was on his way to being the richest man in the world, worth more than four billion in today’s dollars, wrote, with concern, about class tensions; he criticized the emergence of “rigid castes” living in “mutual ignorance” and “mutual distrust.” John D. Rockefeller, of Standard Oil, America’s first actual billionaire, felt a Christian duty to give back. “The novelty of being able to purchase anything one wants soon passes,” he wrote, in 1909, “because what people most seek cannot be bought with money.” Carnegie went on to fight illiteracy by creating nearly three thousand public libraries. Rockefeller founded the University of Chicago. According to Joel Fleishman, the author of “The Foundation,” a study of American philanthropy, both men dedicated themselves to “changing the systems that produced those ills in the first place.”

Unfortunately for preppers, the management of serious pain in an emergency situation is tricky: virtually all the potent painkillers have narcotic properties and are very illegal to buy or possess without a prescription. Fixing the underlying tooth problem can be similarly elusive: you need expert knowledge and a collection of expensive and bulky tools: high-speed drills, suction units, and so forth. In the end, the best preparedness strategy is just prevention: take good care of your mouth and stop by for a routine checkup at least once a year.
Judging by that rationale—“people are not going to take care of you”—the impulse to prep is as much a response to governmental failings as it is to apocalyptic fantasies. During Hurricane Harvey, Houston residents relied on the “Cajun Navy”—generous volunteers with boats—to evacuate them. After Hurricane Maria, a Harvard study found that the Trump Administration’s neglect of Puerto Rico caused four thousand six hundred and sixty-five deaths, many because of interruptions to medical care. And, this week, as historic fires engulfed huge areas of California, the President accused the state of “gross mismanagement of the forests.” Charles, outlining his vision of a doomsday scenario, says, “It’s when law enforcement stops going to work, that’s when the breakdown begins. Now you’re talking about a free-for-all, every-man-for-themselves kind of deal.” Whether or not the apocalypse comes, it seems like that breakdown is already under way.
If you need some inspiration, perhaps the most iconic and time-tested semi-auto design is the 1911; it was originally a pretty bulky and heavy all-steel firearm, but many manufacturers now make lighter, scaled-down variants that are OK for carrying around. Alternatives include a growing number of more lightweight, polymer-frame guns, such as Glock 43, M&P Shield, or SIG P365. For revolvers, Ruger LCR and Smith & Wesson 642 are probably two very reasonable picks to haul around. Some very futuristic if a tad more expensive revolvers are made by Chiappa, too. Whatever you do, avoid Taurus.

This requires a great deal of research, but it can pay, big time. Let’s take our example from before.  A $1.00 coupon on a purchase of $5.00 means you have to spend $4.00 under normal circumstances. Let’s say, however, that one week, your store is having a sale on that item.  Instead of it being $5.00, it is on sale for $3.50.  Then, you use your $1.00 coupon on this sale price, bringing your overall purchase price down to $2.50.  That’s 50% off, something we normally would consider a great deal! Now, let’s say that it is also double coupon week.  This would mean that the purchase price would be $1.50.  Triple coupon week? You get the picture.
Chances are that you have these foods in your kitchen right now, and you already intersperse them into your menus on a daily basis. I like to have at least – at least – a one month’s supply of these first layer foods. Having a supply that will see your family through at least a month means that a short-term emergency will hardly be noticeable to your family and that they’ll experience very little difference in the way they normally eat.
Knives. Very lethal and dangerous at close quarters, but only provided that you have the element of surprise on your side. They require some degree of physical fitness and training to use well. Their value is diminished when facing multiple assailants or dealing with a gun-wielding individual: even if you stab them, you are probably still gonna get shot. In a handful of places, carrying a knife may be illegal or subject to somewhat confusing restrictions, so perform due diligence if you want to take this route.
Bare hands. No deterrent effect, but surprisingly effective when a confrontation can't be avoided - especially when facing a single assailant. Reserved for people who are physically fit and willing to invest a fair amount of time into training. One of the most pragmatic and widely-taught schools is Krav Maga, and there's certainly no harm in checking it out.
I will not stock PAncakes because they are water wasteful. You hydrate something just to boil it off. Also I don’t need the sweetness. Raw, organic honey has enzymes helpful for cuts though. A good medicinal vector I think. NOT for eating. The single most helpful SHTF thing you can do is eat well and get your appetite down before the fact. Eat light to heavy and don’t eat when you are not hungry EVER. Yesterday I only ate one meal and even then not really cause I was hungry but kinda for fun. IT was two potatoes. I had the energy to get shit done all day because I eat veggies when I need to eat. And I take my vitamins: Vitamin A! Vitamin D! And Vitamin K! The holy trinity of eye health, mental health, bone/teeth health and everything else.
I don’t know how to advise you on preparing for low temperatures and snow/ice problems: one thing’s for sure, back when Quebec had its massive ice storm, it took them SIX WEEKS to get the power back on. But having electricity will be moot if the hydroelectrics are frozen, not to mention the distribution problems. As for 60 below, it doesn’t matter which scale you use: it’s COLD.
Few people get beyond storing the four basic items, but it is extremely important that you do so. Never put all your eggs in one basket. Store dehydrated and/or freeze-dried foods as well as home canned and store-bought canned goods. Make sure you add cooking oil, shortening, baking powder, soda, yeast and powdered eggs. You can’t cook even the most basic recipes without these items. Because of limited space I won’t list all the items that should be included in a well-balanced storage program. They are all included in the The New Cookin’ With Home Storage cookbook, as well as information on how much to store, and where to purchase it.
When the average person thinks about doomsday preppers, they probably think of paranoid right-leaning wing nuts clinging to a small arsenal of guns and stockpiling toilet paper from Walmart in case their conspiracy theories come true. It's a fair assumption — many television depictions reflect that mind-set, though the fears vary from group to group. Some are afraid of government collapse, others fear a solar flare, still others are preparing for a race war they think is inevitable. When those are the dominant examples, it's easy to dismiss the practice as absurd and hysterical.
Break-ins are difficult to prevent, especially in suburban single-family homes with secluded backyards and street-level windows and doors; tall fences and window bars can work, but they are expensive and tend to draw the ire of your neighbors. The most cost-effective solution may be to keep your windows and doors closed when away, but beyond that, just optimize for hassle-free outcomes. You can leave some less important goodies in plain sight - say, some cheap jewelry, a modest amount of cash, and a beat-up phone - and put all the real valuables in a much less obvious or less accessible spot. A heavy safe will usually do; diversion safes are pretty cool, too, if you trust yourself not to accidentally throw them away.

If a silo in Kansas is not remote or private enough, there is another option. In the first seven days after Donald Trump’s election, 13,401 Americans registered with New Zealand’s immigration authorities, the first official step toward seeking residency—more than seventeen times the usual rate. The New Zealand Herald reported the surge beneath the headline “Trump Apocalypse.”


I personally like 5 gallon buckets with the gamma lids, so that I can access and rotate my food. I built shelves for food storage but I do have some of big Home Depot style orange shelves and they would work well. I also have some mix of number 10 cans but i like them less because they seem so bulky. For things that i rotate through slower input a Mylar bag in the bucket to keep thing fresh. I live in Utah and we have an industrial container store that sells buckets and lids for a great price, a lot less than the e-prep stores.

For personnel who are flying over large bodies of water, in additional to wearing a survival suit over cold water, a survival kit may have additional items such as flotation vests, sea anchor, fishing nets, fishing equipment, fluorescent sea marking dye, pyrotechnical signals, a survival radio and/or radio-beacon, formerly a distress marker light replaced by a flashing strobe, formerly a seawater still[4] or chemical desalinator kit now replaced by a hand pumped reverse osmosis desalinator (MROD) for desalinating seawater, a raft repair kit, a paddle, a bailer and sponge, sunscreen, medical equipment, a whistle, a compass, and a sun shade hat.
